I have a transmuter that seems to be stuck at level 100. It says 100/160 and I've been transmuting everything I can as high a level as I can and I have not made another level for MONTHS. Am I missing something?

Yep! After skill 100 you have to get your skillups by crafting Transmuter-made adornments, not by actually transmuting.
