What do the three adventure packs add to the game? Like new races and stuff?
Nothing so exciting. There are small bonuses, like some illusions, a handy spell or item or maybe something for your home, but for the most part they are exactly what they sound like: another fun place to adventure with a special theme.
Let's see...
Splitpaw had some house items and is a great place to grind levels from (someone check me) 20 to 50; Bloodlines has some house items and some recipe books for spells only available with the AP and faction; Fallen Dynasty (that's the one I could remember) was beautifully deep on Lore, had some nice crafter items and I hear the raids were fun.
The idea behind an adventure pack is they're a little add-on for extra content between expansions, and are not necessary for the game, like an expansion with a new race might be.
