Honestly, I am not sure I know what you are talking about, but I will try to help. If you are referring to "professions" as Scout, Priest, Fighter and Mage, then I can understand your confusion. Those were the old classes and have since been deleted in those forms. Originally, you had to pick between these four "professions" and you would later progress to your final "profession" (i.e. before, if you wanted to be a necromancer, you would choose mage at the beginning.) You are now able to pick your final class from the outset since they removed those starting classes from the game.
Below is a very basic class difference chart for you:
Fighters: The tank classes. Some are better at taking damage, while others are better at avoiding it all together. Monk/Bruiser
Guardian/Berserker
Shadowknight/Paladin
Mages: Damage dealers of all sorts. Some are better with group management and others are better at solo mobs. Illusionist/Coercer
Conjuror/Necromancer
Wizard/Warlock
Scouts: Damage dealers of the up close and personal variety. Ranger/Assassin
Brigand/Swashbuckler
Dirge/Troubador
Priests: Obviously, these are your healers. Each class has a different type of healing prowess. Templar/Inquisitor
Mystic/Defiler
Fury/Warden
