As for the topic at hand of Paladin being a tank...
In my limited experiance grouping (and this is mostly at low levels) all the archtypes have specific roles and can (generally) fill that role fine. Yes, some are better then others at it, that is the way it is in any game.
(Please note I personally have very little experiance with the fighter archtype other then trying out a few on the starter isle thing, most of this is just through observing and reading posts and such)
To use the scout archtype for a minute in comparison:
Lets look at the two evil only scouts, Assasins and Brigands. Assasins have higher DPS, but as a tradeoff they have less utility. Brigands have slightly less DPS, but in turn have more utility like being able to debuff mobs better... reduce mob's DPS, mitigation, ect. Both can do the DPS role in a group just fine, and neither are exactly better then another... it is a trade off.
Now, lets look at the fighter archtype:
For the two good only fighters (Monk and Pally iirc) it is again a trade off between them. Monk has a bit more DPS and Pally a little more staying power thanks to wards and heals and such. Both jobs should be able to tank mobs fine. Maybe not some of the higher end raid mobs, but for general instances? I've found it doesn't really matter that much. Just nab pretty much one of each archtype and you're more then good to go. Sure, guardians may be made pretty much specifically to take the damage, but that doesn't mean that they are the only tank.
