I figured out that:
Gray = too weak
Blue = one to a couple levels below you
White = Same level
Yellow = 1 level Above
Orange = 2 levels Above
Red = You will get owned
Outline in Red = Aggro type Mobs.
If you click on a mob, all mobs that are in that group will be highlighted, but you have to be careful as well. Other mobs that are in the area that are not part of the group, yet still aggro, will find their way toward you if you pull with anything (i.e. taunts, arrows, spells, etc.) other than your body.
Also, use the detailed information on mobs selection in the options menu. I believe you go under options and then to User Interface, but I do not know exactly where to go after that. This will let you see arrows under or above the mobs name when they are selected. Basically the toughness of a mob is not just determined by level, but also by the number of arrows it may or may not have. Any down arrowed mob will be taken down without much resistance, though these type are usually the ones in groups. Even con and single up arrow mobs are a little tougher, but soloable. Double up and triple up should be fought with extreme caution. For instance, an even con mob in your level range may hit for 5 - 10, while a triple up will hit for 80 - 100.
As to your list, it is almost correct. Names outlined in red are indeed aggro type mobs. The breakdown as far as levels is:
Gray - you were right: too weak. In my experience, this usually happens when mobs are 10-12 levels below your level, though there may be a mathematical formula to figure out when mobs turn gray.
Green - mobs well below your level. Level difference usually between 5-10.
Blue - mobs slighly below your level, usually 1-4.
White - even with you
Yellow - mobs above your level. Usually a difference of 1-3.
Orange - mobs well above your level. Usually between 4-6.
Red - stay away. 7 and above.
