If I understand you right, you're talking about archtypes. In EQ2, when you get to level 9, you will pick a archtype specialty path to follow. At level 19, you will do it again to make your final choice. Unlike in FFXI where you can be a 20 Fighter and 5 Mage, here in EQ2 you are a 20 Fighter, no sub jobs.
The only traditional part of it is what the classes do:
Fighter = heavy armor (tank) with low DPS
Scout = medium armor and DPS
Mage = low armor with high DPS
Priest = healer with medium to heavy armor
For example: You start as a Fighter. At level 9, you have the choice of becoming a Warrior, Brawler, or Crusader. Let's say you pick Warrior. At level 19 you will get another and final choice of becoming a Berzerker or Guardian (because you picked Warrior before). You pick Berzerker, and now you will always be a 'Zerker.
You cannot undo your choice of archtypes once it's made, so choose carefully.

Again, race has nothing to do with the profession you get. There are different racial abilities that each race gets, but none are game-breakers.
An Ogre Warrior will do the same samage as a Gnome Warrior.
Any benefits from racial stats you get at early levels will quickly become overcome by stat-boosting gear. So in the long run, it doesn't matter what race you pick.
Now it becomes a decision of what kind of character do you want to be? A huge lumbering Ogre with a huge weapon, or a pig-tailed Elf with fast dual-wield? How about a sweet little female Gnome Necromancer that cackles wildly as her zombie pet devours the enemy's flesh?
The amazing part of this game is that any race can be any class. It is only limited by your imagination. The important thing is to have fun and enjoy the character you make. :)
