You will not find a zone level chart like the very useful one in EQ1. Use this as a general guide though:
1-6 Isle of Refuge
6-10 City Zones, Antonica, Commonlands, sewers
11-20 Antonica, Commonlands, specialty zones (i.e. Blackburrow, Vermin's Snye)
21-30 Thundering Steppes, Nektulos Forest, Splitpaw Saga (adventure pack US$8, level 20+ scalable zone)
31-40 Enchanted Lands, Zek The Orcish Wastes
40-45 Feerott
45+ Everfrost, Lavastorm, Desert of Flames (expansion pack US$30)
There are many sub-zones, I'll call them, in each main zone. To name just a few, in Thundering Steppes you have Ruins of Varsoon. In Nek Forest you have Nek Castle (instanced-VERY good story and full set of quests). In Enchanted Lands you have Runneyeye. In Zek you have Deathfist Citadel (instanced). In Feerott you have Temple of Cazic Thule. These are but a few.
These zones are typically harder, Heroic, and require a full group, maybe even a raid.

In each of the zones, it typically follows a pattern of increasing difficulty. Meaning, the further you get from the zone-in point, the harder and more deadly the mobs.
Best thing to do is wander around and find things. You will see some solo mobs, some group mobs, and even a few named mobs. See what the two of you can handle, then push your limits.
Check out
this for very good out-game maps. And by all means, ensure you have
this!
Remember, when all else fails, run! :)
