Mainly, the type of extract you get from a rock, stone, flower, or tooth determines what tier you can imbue, i.e. Sparkling flower = Sparkling Extract. From what I have seen, they all make the same type of item, at least for weapons.
Weapons give a damage proc. Can't remember just now the name for the proc, but it does some nice damage.
Sanguine-imbued: Shields have a sort of counter-attack spell proc, I believe, when someone uses a ranged attack on you.
Lambent-imbued: Armor has a proc that has a chance to heal you and I believe has an out of combat regen effect.
As for imbuing wands, dolls, and so forth, I unfortunately haven't dealt with them much myself, so can only tell you that they make some very useful trinkets for your usable item slot, and also the wand can be pretty burly on its own, with the spell damage determined by the imbuing.
