Well, the short answer is this. The determining factor of what you can make is not your race/class. No matter what race/class you are, you can MAKE anything you desire. The determining factor is your tradeskill class after level 9 (i.e. craftsman, outfitter, scholar). As far as who can use what you make - depends on your inherent skills for that character. Hit the "L" key on the keyboard and find out what skills your toon utilizes. For instance, if you are trying to make heavy plate for your druid, you are up ****'s creek! This is why the bow conned red to your crusader: if you hit "L", you will realize they don't possess the bow skill :)
Furthermore, the opposite is true. If your toon(s) is/are level 25 and you are still trying to make them Tier I equipment (artisan level 1-9), then grab that paddle again! If you really want to make your own equipment for your toons, you should get your tradeskill level almost one tier higher than their current level (i.e. Toon Level=21, TS Level=29-31). That way you know the equipment you are making should be, at the very worst, on par with their level, if not above, but still wearable.
